Do I have to pay tax if I never converted my crypto to fiat?

Yes, in almost every jurisdiction. Trading one cryptocurrency for another (e.g. ETH for SOL) is a taxable disposal of the ETH at its fair market value on the trade date. Spending crypto on goods or services is the same. The 'never sold to fiat' defense does not exist in US, UK, German, French, Australian, or Canadian law.
